Today was all about the baked apple. So much potential for escape from reality. And have that Henrik, the inventor of World Baked Apple Day (since 2013), and I used hard.

I actually wanted to create a cake for World Baked Apple Day over five years ago. To be honest, I was always held back by the effort. Meanwhile, however, I know my way around cake baking better and better and was able to develop my own recipe, the basis of which is a very typical recipe for Swedish apple tart.
As I said: I’m not a cake professional. The level of difficulty is therefore quite easy. However, since the cake consists of three layers, it is a bit time-consuming, albeit with longer waiting times.

Recipe for a small cake

The diameter of the round springform pan is 18 cm; a cake ring is also required. Certainly the ring of the springform pan could also be converted, depending on how high it is. Also at the start should be: a saucepan, stove, oven (you don’t say), at least one bowl, a knife, something to stir and a hand mixer for whipping cream

Step 1: cake base

  • 80 grams of sugar
  • 1 packet of vanilla sugar
  • 120 grams of wheat flour 550
  • 1/2 packet of baking powder (that’s about 8 grams)
  • 140 ml cold sparkling water
  • 40 grams of sunflower oil
  • some oil to grease the form

Before starting, I preheated the oven to 180 ° C top and bottom heat. I covered the small baking pan with baking paper and coated the inner edge with oil. So nothing will stick on afterwards. The easiest part: Mix all dry ingredients in a bowl and then add the liquid ones. Now I had to stir quickly with the help of a whisk so that no lumps were formed and the “fizz” of the mineral water did not dissipate. Sparkling water is particularly important so that the dough is nice and fluffy in the end. Then put it in the pan and bake for about 25 minutes. During the time when the floor was cooling down, I took care of the second step.

Step 2: baked apple filling

  • 600 grams of favorite apples
  • 180 ml of water or vegetable milk
  • 110 grams of sugar
  • 1 pinch of salt
  • 50 grams of custard powder
  • 60 grams of lemon juice
  • 25 grams of almond kernels
  • 60 grams of raisins
  • 1/4 teaspoon cinnamon
  • Replace 1/4 bottle of rum flavoring or part of the water with rum

This is the most labor intensive step because of the apples. I peeled the apples, cored them and then cut them into small sticks. Then everything is put in a saucepan on the stove and brought to a simmer over medium heat. I kept stirring it because the risk of scalding is very high. As soon as it bubbles back and forth a bit, the baked apple pie filling can be left off the stove and allowed to cool for about ten minutes until it can be spread over the completely cooled base. Before that, however, I took the cake base out of the mold and put the cake ring over it. It stays on until the end of step 3.

Step 3: marzipan cream

  • 140 ml chilled vegan cream (for example the unsweetened one from Schlagfix)
  • 1 to 2 teaspoons of cream stabilizer (SanApart works best for me)
  • 50 grams of marzipan
  • Flaked almonds

The tastiest step! For this marzipan cream that is really much too delicious, because marzipan is my favorite sweet, I first put about five tablespoons of the cream in a saucepan. Then there are the fifty grams of marzipan that I grated. This works best if the marzipan was previously in the freezer. But to be honest, next time I would just cut the marzipan into tiny pieces. In any case, I melted the marzipan in the cream at very low heat. As soon as this is done, the liquid marzipan can be in the refrigerator until it is absolutely no longer warm.
The cream that is left in the packet can now be whipped in a bowl and neatly whipped until it is completely firm. A good tool is SanApart. I mixed that in. This makes it quick and easy and the cream stays in place forever.

Once this is done, the marzipan mixture is carefully folded in until everything is well mixed. Then it’s time to put it on the cake. I sprinkled them with pieces of almonds, but of course you can decorate them as you like. Scattering cinnamon on top would certainly be a tasty option. Or just both!

The cake ring can now be removed. Finished.

Henrik had made a baked apple lasagna last year. This year he simply combined two of his favorite things: raclette and baked apples. Somehow it happened that his little annual World Baked Apple Day video became one that was oversized. So, for my part, I can only wish for a blessed #Weltbratapfeltag and finally a real lockdown so that more people are not missing in the coming year. In Germany alone, over 20,000 people have died of or with Corona. These are such abstract numbers. Every single number of it is a real person.
